Creating a delicious and repeatable espresso blend has long been regarded as a hallmark of a good roaster. With this blend recipe, we have taken out the guesswork needed to make your own blend. With the green coffees in this bundle and your IKAWA Home roaster, you will be able to create a blend suitable for any type of espresso machine.

Fruity and Nutty Blend Pack

This pack contains green coffee from Brazil and Ethiopia. Brazilian coffee lends itself as a sweet and nutty base, while the Ethiopian coffee lends its sweet and fruity notes to create a well rounded espresso profile. You can expect flavours of Blueberry, Almond, and milk chocolate, regardless of the brewing method.



Bayford Street Blend Pack

This pack pays homage to our East London Headquarters, the heart of our business. Each Bayford Street Blend pack contains green coffee from Vietnam and Nicaragua. Both of these coffees are versatile and are well suited to a Medium-Dark Espresso Blend that has flavours of Citrus, Dark Chocolate and Toffee.

Nutty and Fruity

  • Once rested, we found in testing that this coffee did really well in a traditional espresso machine, with 96˚C water, and 9 bars of pressure. Our recipe for extraction using this type of machine is 18g of coffee, ground finely for espresso, extracting for 25-30 seconds, with a resulting espresso that is around 45 mL. The flavour that you can expect are traditional espresso flavours that will include blueberry, almond, chocolate, liquorice. When milk is added more caramel and milk chocolate flavours come through.
  • You could also use a stovetop espresso machine. We use a 1:10 ratio for stovetop espresso, and would recommend the same for a pump type espresso machine, Pump type espresso machines tend to be on the cheaper side, and do not brew coffee the same as a traditional espresso machine. Because of these differences, the coffee needs to be treated slightly differently. In testing, we used 25g of coffee, and filled the bottom chamber of our stovetop espresso maker, with 250mL of 96˚C water. Using a towel to protect our hands, we tightened the top chamber onto the bottom chamber and set the maker on a high heat. Because the water used is already hot, it won’t take long to brew. Brewed this way, the coffee will have flavours of blueberry, almond, lemon, white sugar with a creamy body.

Bayford Street Blend 

  • Once rested, we found in testing that this coffee did really well in a traditional espresso machine, with 96˚C water, and 9 bars of pressure. Our recipe for extraction using this type of machine is 17g of coffee, ground finely for espresso, extracting for 25-30 seconds, with a resulting espresso that is around 32 mL. The flavour that you can expect are traditional espresso flavours that will include orange zest, walnut, dark chocolate, herbal with a lingering baking spice finish. When milk is added more toffee and milk chocolate flavours come through, as well as a complementary syrupy mouthfeel.
  • You could also use a stovetop espresso machine. We use a 1:10 ratio for stovetop espresso, and would recommend the same for a pump type espresso machine, Pump type espresso machines tend to be on the cheaper side, and do not brew coffee the same as a traditional espresso machine. Because of these differences, the coffee needs to be treated slightly differently. In testing, we used 23g of coffee, and filled the bottom chamber of our stovetop espresso maker, with 230mL of 96˚C water. Using a towel to protect our hands, we tightened the top chamber onto the bottom chamber and set the maker on a high heat. Because the water used is already hot, it won’t take long to brew. Brewed this way, the coffee will have flavours of orange, dark chocolate, with a velvety mouthfeel.
